Grilled Wagyu Skirt Steak Fajitas
Fire up the grill and enjoy this incredible fajita meal. Recipe makes 4 hefty and delicious tacos. Skirt steak never tasted so good! (Flank/flat iron can also be used)

Ingredients

  • (2, 8 oz.) Skirt Steak
  • (1/4 cup) Orange juice
  • (1) Juice from a lemon
  • (1) juice from a lime
  • (pinch) Salt
  • (As Desired) Ground Pepper
  • (As Desired) Cayenne Pepper
  • (2 Cloves) Garlic, pressed
  • (4) Medium Tomatoes
  • (2) Bell Peppers
  • (2 Cloves) Garlic, whole
  • (1/2) Onion
  • (2 Tbsp.) Olive Oil
  • (1 Handful) Parsley, finely chopped
  • (1/2) Avocado, diced (optional)
  • (4) Tortillas, corn or flour

First, you want to marinate your steak to give it the tangy, intense flavor that complements the flame-grilled fajita salsa. After your steak is thawed, combine orange juice, lemon juice, lime juice, salt, pepper, cayenne, and garlic into plastic bag or marinade jar with your steak. Let marinate for at least 2 1/2 hours.

Next, you can get started grilling your veggies. Fire up the grill and crank it up to high heat. Put whole tomatoes, peppers, garlic, and 1/2 onion in cast iron pan without oil and place pan on grill rack. Let veggies sit until you hear them start to sizzle. Once sizzling begins, turn the veggies. Continue until veggies are nicely charred around the outside. This should take about 10 mins. 

Once veggies are done with this step, remove pan from grill and carefully cut up your peppers, tomatoes, garlic and onion. Drizzle cast iron pan with olive oil and return veggies to pan. Season with salt and pepper. Add fresh parsley, cayenne, and chili powder (use sparingly if you don't like spice). Put pan back on grill and cook for another 7-10 mins. Your fajita salsa is now done.

Once this is done, it's time to cook your steak! Remove from marinade and wipe off any excess as you don't want it to drip and burn in the grill. Put steaks over high heat and watch closely, turning them as needed to keep from burning. Cook until 129 degrees F, or desired doneness. 

Remove steaks and let sit while you put the tortillas on the grill to warm up. Leave tortillas on grill for 1 minute, each side. 

Cut steaks into bite size pieces, going against the grain. Construct your taco with steak pieces, salsa, and avocado (if desired).

Recipe makes hefty dinner for 2 (4 tacos). Enjoy!
