Jamaican-style Braised Oxtails

Directions

INGREDIENTS!! How To Make Oxtail.

  1. Clean fresh oxtail

Rinse oxtail with water.

2.Sprinkle salt and a squeeze lemon juice over oxtail.

Let the oxtail soak for 5 minutes

3.Then rinse.

3 1/2 LB oxtail cleaned with lime juice and lemon


4.~ Add the following ingredients to the oxtail.


1 tsp salt

1/8 tsp pepper

1 tbsp adobo seasoning**

1 packet sazon (goya)

3 tbsp green seasoning (Haitian Epis)**

2 tbsp ketchup

1 tbsp Worcestershire Sauce

2 tbsp soy sauce

1 tbsp chopped parsley

1 scotch bonnets pepper

1 tbsp thyme leaves

2 cup chopped onion

1 cup green belle chopped

1 green onion chopped

3 garlic cloves chopped

1 cup chopped tomato


5.~Marinate for 1 hour in the refrigerator


6.~Braise oxtail in a fry pan

2 tbsp olive oil

2 tbsp brown sugars or browning


7.~After the brown sugar is caramelized

add the oxtail. Brown each side.


8.~Add vegetables

Let it sit for 10 minutes.

9.~Transfer the oxtail and veggies to a pot.

10.~Add 8-10 cups of water

11.~ Let it simmer for 3 hours.


The water will simmer off.

Serve over rice.

Adobo Seasoning


INGREDIENTS

  • 2 tablespoons salt 
  • 1 tablespoon paprika 
  • 2 teaspoons ground black pepper 
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons ground cumin 
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder

Mix all the ingredients together.



EPIS HATIAN SEASONING RECIPE


  • ½ cup Fresh parsley chopped
  • 10 sprigs Thyme
  • 1 tablespoon Whole Cloves
  • 10 Cloves garlic
  • 1 cup Bell peppers and onions
  • 1 cup Green onions
  • 2 tablespoon Basil
  • 2 teaspoon Salt and pepper
  • 2 teaspoon Cayenne pepper
  • 1 cup Olive oil
  • ⅓ cup Apple cider vinegar
  • ¼ cup better bouillon vegetable base paste


Blend all the ingredients in a blend until smooth.
